Alright, this seems complicated. D-Mack, please correct me if I'm wrong here, but this is the situation:
Jackson called Dickerson up on August 17, 2008, using an option. Dickerson was left with two.
I kept Dickerson with the assumption that since he was MiLB-eligible, he could be an MiLB keeper. But the problem with that is I actually had to use an option to send him back down to the minors. I'm going to use that option effective December 31, 2008. This makes the Dickerson keeper legitimate among my eight MiLB guys, leaving me with one option for Dickerson.
Now, since he's going to start to some degree -- platoon or not -- I'm going to use my third and final option to bring Dickerson up to my MLB roster. I'm also doing this because I have six roster spots remaining and only five picks left in the MLB Draft.
So, yeah. Dickerson's getting called up, and he is officially out of options. I hope all this makes sense to some degree.

You only use up an option when you send him back down. A player is on optional assignment if he is on the 40 man roster but not the active 25 man roster (or in our case, MiLB and MLB rosters). You don't use an option to bring a player up, you only use up an option to send him back down. Dickerson still has two options remaining.

Oh. Thank you for clearing that up, as I was confused for a bit there.
